Cultural Heritage
Tepache traces its origins to pre-Columbian Mexico, where it was initially crafted by indigenous communities such as the Nahua and Maya. The term "tepache" derives from the Nahuatl word tepiātl, meaning "drink made from corn." Over time, the recipe evolved to utilise pineapple rinds, capitalising on the fruit's natural sugars to facilitate fermentation. Traditionally, Tepache is prepared by fermenting pineapple peels with unrefined cane sugar and spices, resulting in a refreshing, effervescent beverage.
Our Recipe & Flavor Profile
We create a harmonious blend of sweet and tangy flavors using fermented pineapple rinds and cores, enhanced by the warm spices of star anise, ginger, cinnamon, and cloves. Our newest addition to our decade-long recipe is fresh lime, which adds the perfect finishing touch. With its light carbonation and tropical essence, our beverage is a delightful alternative to sugary sodas.
Serving Suggestions
Enjoy our Tepache chilled as a refreshing standalone drink or use it as a mixer in cocktails. Its unique flavor profile complements a variety of spirits, making it a versatile addition to your beverage collection. We recommend adding a Tajín rim when serving, or sprinkle in a dash of cayenne for an extra spicy kick and added nutritional benefits.
Note: As with all fermented products, individuals with specific health concerns or dietary restrictions should consult with a healthcare professional before consumption.
Nutritional Benefits
Pineapple (Ananas comosus), a member of the Bromeliaceae family, contains bromelain, a digestive enzyme that helps break down proteins and support gut health. It also provides a good dose of vitamins A and C, supporting immunity and skin health.
Star anise has a long history of use in traditional Chinese medicine. Recognised by its distinctive star-shaped pods, adds both flavour and function. It contains anethole, which helps soothe digestion and relieve gas, as well as sesquiterpenoids (known for their antiviral activity) that exhibit mild analgesic effects. Shikimic acid, also found in star anise, exhibits notable anti-inflammatory properties and was once a key ingredient in the development of antiviral drugs.
Alcohol Content
Due to natural fermentation by wild yeasts and bacteria present on pineapple skins, Tepache contains trace amounts of alcohol, typically less than 0.5% ABV. This minimal alcohol content is a natural byproduct of the fermentation process and not intended to be intoxicating.
