Our non-pasteurized, raw kombucha showcases the freshest ingredients and careful brewing techniques. We start with an organic blend of high mountain teas from Taiwan and raw organic sugar. During the second fermentation, we introduce a flavor combination featuring lacto fermented tomatoes,black pepper & basil leaves and flowers.
This creation initially appeared as an exclusive flavor specifically for Snails 01: Fermenting, brought to you by our hosts at Somewhere Else. This unique blend features lacto-fermented tomatoes preserved in a salt and black pepper brine, which are incorporated into the second fermentation of the kombucha. To enhance this flavor and highlight the savory elements we want to showcase, we've added locally sourced, organically grown Thai basil leaves and flowers to the blend. This combination playfully complements a key condiment typically used on pizza.

Thai Basil (Ocimum basilicum): Basil is a companion plant to tomatoes for they deter each others' pests allowing it to organically thrive on the same soil. The aroma of basil repels pests from tomatoes, and their growth habits are mutually beneficial.The pairing is cemented in dishes like Insalata Caprese, a salad of tomato, mozzarella, and basil with olive oil, which gained popularity in Capri and is now a worldwide classic. And Pizza Magherita. Basil is commonly used to stimulate and soothe the stomach and intestinal activity, stomach cramps, nausea, indigestion, gas and bloating. Both Thai basil and sweet basil are varieties of the same species and belong to the same genus. The key differences between them are their flavour and appearance. We chose Thai basil for its distinct anise-liquorice flavour. The Thai basil used in our ferment is locally grown and freshly harvested, ensuring the highest life force and the best quality.
