Water Kefir (Tibicos) with Basil Leaves & Blossoms

Tibicos, commonly known worldwide as Water Kefir, consists of a microflora of beneficial bacteria and yeast, primarily held together by the bacteria strain Lactobacillus brevis. This fermented beverage, believed to have originated in Mexico, is made by fermenting tibicos in a sugary water solution (we use organic sugar and filtered dechlorinated water). 

Water kefir crystals are also a symbiotic culture of bacteria and yeast, adapted to feed on the sugars present in the solution. The sugar serves as food for the microflora of bacteria and yeast in tibicos. During fermentation, the bacteria break down the sugar and convert it into energy for the yeast. The byproducts of this fermentation process include enzymes, lactic acid, and B vitamins, which are beneficial for maintaining a healthy gut microbiome. Additionally, natural carbon dioxide produced during fermentation gives the finished product a refreshing taste, making it a healthier alternative to heavily processed, sugar-laden beverages.


Unlike traditional kefir (which is primarily made from dairy milk), water kefir is non-dairy and supports a healthy gut microbiome. It’s a great option for those seeking diversity in their diet. If kombucha is too acidic for you, if you are sensitive to caffeine, follow a vegan diet, or are unable to tolerate dairy, water kefir is an excellent alternative.

 

Basil Water Kefir

We offer a second fermentation featuring basil leaves and blossoms. The subtle pink hue in the beverage comes from Thai basil blossoms, which impart a light, floral flavor similar to their leaves. Often overlooked, basil blossoms are edible and rich in nutrients. These tiny flowers, typically discarded to encourage leaf growth, provide a fragrant taste reminiscent of basil leaves. We use a mix of Genovese and Thai basil blossoms, both of which contain essential oils and compounds that enhance their aromatic profile. While specific nutritional data for basil blossoms is limited, their inclusion in our recipe adds a unique flavor and aligns with our goal of attracting pollinators.

Those sensitive to ethanol, pregnant, nursing, or with dietary restrictions should consult a healthcare professional before consuming.
